Chiapas Reserve - Café Mexicano Review
Café Mexicano caught our eye with vibrant fiesta colors. And when we saw they had a chiapas coffee (one of our favorite beans) we were eager to try the single origin Chiapas Reserve.
Chiapas Reserve is a medium-dark roast that comes finely ground. We brewed it in our French press to our usual specs: 50g coffee, ~32oz of 200-202℉ water, steep 3-5 minutes. It has a very active bloom and right away has a pleasantly sweet aroma with notes of sugarcane and a gentle nuttiness. The sugarcane sweetness mixes with the darker qualities to produce a caramelized flavor, akin to perfectly toasted marshmallows. The nutty finish is still gentle in flavor and reminds me of hazelnuts.
This coffee is well balanced with sweet up front flavors, a nutty middle, and a dry finish with a lingering herby bitterness. And what a great, smooth brew.
Café Mexicano’s Chiapas Reserve is not only delicious, but it is affordable! We bought this at HEB for $7.00 and are very pleased with the flavors and level of care evident in this coffee. It is also cool to note that all of Café Mexicano’s coffees are sourced from Mexico and nowhere else. This single origin company highlights the unique diversity of Mexico by profiling arabica beans from Chiapas, Oaxaca, and Veracruz.
Chiapas Reserve is a great coffee and we are excited to try the other Mexico coffees from Café Mexicano. If you still haven’t tried Chiapas coffee yet, don’t wait!
